At one time it was thought that one battery bank should be discharged and then switch to the other. Then a lot of research showed it was less damaging to the batteries if they were not discharged as deeply. So, the best practice, if you want to keep the switch, is to keep it in the both position.

PS. I think you should re-evaluate your choice of windlass. IMO it is too small for a T37.
