We keep yogurt in the bilge without refig in Calif.

Herbs, easy to grow and don't take much space.

I knew several cruising boats that did sprouts

Yep- and red potatoes. And onions of course
I tried growing sprouts on my '89 cruise
We grew them (meaning Joni grew them) and it was easy and a treat where freshies were scarce like the Family Islands.
I love Brussels sprouts... but they take dirt to grow.
Near the top of the list in Micronutrients, too.
