Here's a composite rudder built for an 80' wooden boat.

() The boat(The Spirit of Bermuda) was cold molded and this rudder was built by some specialists elsewhere. The whole idea behind the structure would be in the skeleton frame. You can just picture the bones inside welded to the shaft. It was amazingly light.
