And I wondered why the design of such an enormous wheel evolved? I'm not sure if the helmsman was undersized, but it looked uncomfortable to me(like those high handle bars on extreme choppers). What's the reasoning, more leverage or something?

This guy is a good sailor and was sailing until the wind died completely in the Muscle Ridge channel(in case he's ready this ).
