Well, part of the difference jumps out

right away. To un-wire all of my electrical connections requires a stent in one locker or another removing wires from a terminal board. I could see two or three hours eaten up right then. My Lazy Jacks are not "clipped on." They're spliced on. I would have to remove semi-structural parts as well. So forth and so on... That makes sense, it seems it's all in the way the boat is set up.
