wife enjoys sailing when its good, doesn't care for it when its bad (me neither, for that matter). But it isn't her "thing" and she is not motivated to learn a lot about it. I treat it as single handing, with some occasional assistance. She will stand watch at night (we have done several 2 - 4 day sails) but will call me up if anything needs to be changed or looked at - even sail trim. We have tried MOB drills, but I doubt it would work if I was over (not sure it would work if she was over...), especially on this bigger boat. I carry a PLB on me a night, just as I would single handing. In spite of this, we have talked about longer passages, think they might be possible but would be easier with an additional crew member. You just have to think of it as single handing, with a passenger. But that is a lot different than my perception of the situation on Rebel Heart.
