We rarely use much more than 90' of chain

Sometimes as much as 120'. Here in Maine anchorages are typically 6' to 20' deep with tidal ranges an additional 10' to +20'. The tidal ranges are greater further east approaching the Canadian border. I agree with Larry, your plan of 60' to 100' of chain will effectively be an all chain rode.
