Seems to me there is a lot of product support out there for 12v electronics and LED lighting. Is that part of the plan? You could use an inverter for the 120vac stuff.

Some big solar arrays and batteries can handle a lot. As in a boat, the heavy draw will be for refrigeration and heating. I assume you'd skip the air conditioning or use a generator for those relatively few days a year you really need it?
