We had double anchors on rollers and opted tp change to one oversize Delta ((88lb) and 300 feet of chain. Our second anchor had the line in one half of the chain locker with the anchor (Danforth) ready to use under the V-birth, just put it on deck through the hatch, aattach the shackle with chain hanging on a deck plate at the bow and your ready.
2 anchors at the bow are usually only needed on rare occasions and look like a mess on most boats. Better to have it stowed but ready at hand rather than have all the junk on the bow.
I say, 1 oversized & effective anchor with lots of chain and use it most of the time. If you do need a second or different anchor it's ready in a minute.
